As a Sous-Chef (M/F), your missions will be:
- Team management: Animation, distribution of work, skill development of staff (commis, apprentices, chefs de partie), and replacing the chef in their absence.
- Production & Culinary creation: Participation in the development of menus and recipes, management of dispatches during service, and strict quality control of dishes (cooking, seasoning, plating).
- Economic management & CSR: Stock monitoring, placing orders, controlling material costs, and applying the establishment's CSR commitments.
- Hygiene & Safety: Application and monitoring of strict compliance with the HACCP method (traceability, cold chain, cleaning).
Sous-Chef (M/F) hours may vary (Split shift/Continuous service): 09:30-14:30 / 18:30-22:30 / 08:00-15:00 / 15:30-23:00
The profile we're looking for
Candidate Profile
- Experience: Successful background as a Chef de Partie or Second de Cuisine.
- Technical skills: Mastery of cooking and plating, strict adherence to the HACCP method, and stock management.
- Personal qualities: Rigor, interpersonal skills, and team spirit.
- Values: Passion for sustainable gastronomy.
Your benefits
- Attractive remuneration of €2,700 gross as well as a meal allowance of €8.70
